On my installation (Ubuntu 8.04), it does show up as "hiddenmenu" just as Janaka pointed out. I checked the file! If yours shows differently, I am curious as to what version, or what would be the difference causing it to be different (sorry if the wording is confusing).
Here is the section, copied from the file... ## hiddenmenu # Hides the menu by default (press ESC to see the menu) hiddenmenu It is the fourth section from the beginning. I would assume that if you were to comment out the word "hiddenmenu" it would present you with the standard GRUB choices, although there may be something else that needs to be un-commented.
