Unlike Windows, Linux doesn't really have an equivalent for Restore Points.
The best advice that I could give would be to keep a diary of changes that
you could refer to and undo. Keep a copy of this on a machine other than the
one which you are building.

Also, if you would like a GUI, but don't want to devote a huge amount of
resources to it, you might want to take a look at #!CrunchBang, a
distribution derived from Ubuntu that makes use of the lightweight Openbox
Window Manager. This way you get the benefit of the Ubuntu repositories
without all the bulk of a full-scale desktop.
