You could write a simple bash or python script that would copy your .evolution folder over to your ubuntuone directory. ...However, in my humble opinion I would not (yet) ~rely~ on UbuntuOne for backup, especially with directories as complex as .evolution.
I had attempted to do something like what you're doing by syncing my Tomboy notes up to UbuntuOne and that ended up a mess.
