In user preferences, under the "File" tab, you will find a field labelled "Save Versions". Here you can choose how many auto-save files blender should keep. To enable auto-save, still in the user preferences, under the "File" tab, tick the "Auto Save Temporary Files" box (should be set by default), to adjust the auto-save interval, use the field bellow labelled "Timer (mins)".
If you set the "save versions" to "3" and the timer to "5", in the same folder where your .blend is saved, you will after 5 minutes you will have a file called .blend1, after 10 minutes, a file called .blend2.
