just open Udig and click on the crs button on the left lower side of the map frame. As you may think, the altered crs is not available, but that shouldn't stop you. If yours isn't there, you could also think about to add it. Udig permits to paste in your altered crs definition. We do that often for Italy, since we have 3 different versions of the EPSG:3003.
