Loren, In the UIMA Simple Server User Guide documentation<http://incubator.apache.org/uima/downloads/sandbox/simple-server/simpleServerUserGuide.html#d0e134>, there is a description on how to use the "WhitespaceTokenizer" (also in the sandbox) as a simple service.
