Check out partimage -- http://www.partimage.org/Main_Page -- it supports
a bunch of common FS and only stores data used instead of just dumping
everything ... including NTFS (probably not what your interested in, but
a useful tid-bit either way).
Pretty sure thats more or less what your looking for -- it has a nice
ncurses interface and everything.
