I don't think you've missed anything at all... The only reason anyone would want all drivers copied over is if they wanted to keep them on the PC for easier hardware changes later. Our install times with Driver Packs are about 5-15 minutes longer (depending on the PC) than with just a custom set. But with so much variety in our systems we just can't manually set up driver sets for them.
