If you have push-pull cable steering, there's a nut at the end of the cable
where it attaches to the rudder tierod that enables you to adjust the
steering so the wheel is amidships and the rudders run the boat in a
straight line.  If it's hydraulic, there's an adjustment on the end of the
ram that does the same thing.  If you have an RPI (rudder position
indicator), you can adjust the arm on the rpi sender where it attaches to
the rudders to get it to show dead ahead when the boat is tracking
straight.  If you need to align the rudders in relation to each other,
there are several schools of thought on that issue.  Google "yacht rudder
alignment" and study away!

Most of this can be accomplished from inside with the boat in the water.
 It's not an exact science, and is less important if you don't run the boat
at planing speed.  You'll find that some folks run 'em parallel, some toed
in, some toed out.  Have fun!

Since all these Unis are getting pretty old, here's something else to
check.  If you do have cable steering, check the condition of the pivot
that secures the end of the cable sheath to the rudder shelf.  The original
pivots were mild steel, and can get very rusty, and the damage is hidden
inside the pivot clamp.  If that thing breaks, you will totally lose your
steering.  It's worth having a look.
