Is there any type of line splitter available that will safely split the
voltage and provide 2 x 50A/125v?

Doug,
We have a 46' Uniflite and have the same electric. We bought a splitter
with 50/125 to connect to the boat side and a 50/250 to connect to the 50/250
cable. That cable goes to the power post. We imitated the double electric
lines and r very satisfied.
The splitter was $450. I'm sure you can do better on ebay.
We have lived on our yacht for 12 years and love it.
