I know nothing about purging protein sources, Wilma. Teach me. Does it involve giving an enema to the protein source, or something?

I'll cook a raccoon, but butchering one is beyond my toolkit, to say nothing of my skillkit. Can you offer any tips for urban foragers?

I am the designated mouse-catcher in my household. I'm not interested in cooking them at this time, though. Let me do larks first, like King Henry VI.

As for raccoon, the old guys who ran the BBQ Bus for years up the hill from
52nd to 53rd and Whitby Ave. said it tastes more like Baby Lamb, which is
why poor country people loved them.

Don't know about that but I DO know this.  Never "recycle" any 'source of
protein' unless one knows how to purge them.  It is NOT enough just to cook
it properly.

There is a procedure for purging proteins on one's own, unless one goes to
specialized markets.

A mouse will scare me more than any creature.
