The problems is, if you don't set it up in /usr/local/slimserver you
won't get the init script to work without changes!

It sounds like you have slimserver installed correctly in
/usr/local/SlimServer_6_2_x_v2005-11-09
You should see the directories and files below this.

The other folder with the link is there from your previous attempts. 
You should have already have switched to root permissions to do the
install (sudo su) so once you have, just do
rm -rf /usr/local/slimserver
to get rid of it as Pat says.

If you carry on from 
ln -s SlimServer_6_2_x_v2005-11-09
(making sure you have done a 'cd' to /usr/local so that it's your
working directory), you should be on track.
