I've rebooted again and the slimserver.conf was intact, so not sure of the cause. I am now backing up my slimserver.conf file.
I believe the problem may somehow be related to my apache server. I had shutdown Apache to make changes to my httpd.conf file and could not restart Apache from the command line, so I rebooted. Restarting Apache is a common problem.
