I was able to get iTunes working from a Debian installation using "SlimServer Version: 6.5.0 - 9916 - Debian - EN - iso-8859-1". I did need to make a minor code change tho. See the following thread for the change.

I have artwork issues after switching to iTunes 7, but that is a minor concern for me. Anyway, hope this helps.
