I've had great success running Ubuntu with the latest stable slimserver (6.5.1)
Once it's running updates are no problem and I've even automated the creation of an mp3 library with the excellent flac2mp3 script. Plus I can run the gmediaserver upnp media server so my wife can use her AE wi-fi radio as well.
