I'm not sure if I was just lucky here or not, but maybe it will help someone. When checking out the Debian download instructions, I noticed the following:

I remembered adding the info to the bottom of the file, rather than at the top. When I moved the SqueezeCenter info to the top of the file and ran another apt-get update, I did have version 7.01 available to me.
