Cover art is indeed a tricky matter. To be sure that it is displayed I resize all cover art bigger than 500x500 pixels to a size of 450x450 and save it as cover.jpg or cover.png in the same folder the music resides. After a rescan it is also advised to clear the browser cache to have the right pictures displayed in the web interface.
