Answering my own question... seemingly, since the NTFS drives have
"labels" on them, using the LABEL=music1 instead of /dev/sdb1 seems to
work.  Time will tell, but I think I've got it working the way I want.

/etc/fstab entries now look like this:

LABEL=music1 /media/extdrive1 ntfs-3g auto,gid=1001,umask=000 0 0
LABEL=music2 /media/extdrive2 ntfs-3g auto,gid=1001,umask=000 0 0 

(where music1 and music2 are the NTFS volume labels of the drives).
