I think you have misunderstood what I was suggesting.  As your music is
.wav format, it's possible that the information which is being passed
to Squeezecenter via the .xml file from iTunes isn't in a standard
format which Squeezecenter can process.  The interesting thing is that
it used to work with 6.5.4. however there have been lots of changes in
the scanning schema since then.

I take it you don't want to try with a FLAC or other lossless format
because these aren't supported by iTunes?

You could try resaving the tags into the .wav files using something
other than iTunes and then rescanning.  Also, check that you're
pointing Squeezecenter at the right .xml file - iTunes can change the
file being used without making that clear. However, I do suspect the
problem is that you're using a format which doesn't officially support
tagging or have a proper standard for it. You can also roll back to
6.5.4.
