Having a xubuntu 8.10 in a VM I thought I'd take a look. My /etc/hosts
is also using the snazzy 127.0.1.1 entry, and I have *no problem*
finding SC from the host, with either 127.0.0.1 or localhost (using
Firefox).

with information about this configuration for /etc/hosts.
I find a bit puzzling that /etc/hosts will not allow the machine to
resolve its fully qualified name, such as "gestalt.localnet" (localnet
being the name of your local domain, defined in your router, most
probably). I guess this is canonical, but more fragile.
Perhaps you want to try and modify your hosts file like this (adapt
"localnet"):

Also, on SC in Settings>Advanced>Security I have set for no security at
all. Specifically I use "do not block" (incoming connections).
