The waveinput plugin will pickup anyting your computer is playing. It
can be controlled from SBS (from some/the computer). Are you looking to
use only softwareplayers? Have you tried SqueezePlay - its not
officially supported, but perhaps somewhat more so, than
squeezeslave...

An Airport Express also means booting the computer? Unless you only
rely on an iThingy (in which case I would consider going a completely
different route)?

There are plenty of means of getting music onto a Squeezebox without a
local SBS install, via mysqueezebox.com, you could look into some of
the thousands of Internet-radio station, last.fm, pandora, rhapsody, or
some other music service - they all work using mysqueezebox.com

Really, there isn't anything the Squeezebox system can't do :)
