A lot of people run a Sheevaplug where the OS (I think Debian is the
preferred choice) is hosted on an SD card or a Joggler with Ubuntu
running from a USB stick. As long as you get a USB stick with decent
speeds then I imagine you'd get acceptable performance depending on
what you are used to.

Also, remember that USB flash drives have a limited lifespan in terms
of writing to them, so you will want to limit the number that occur.

I'd say read the Sheevaplug forums in 3rd party hardware for more
information if no one else chips in here and/or check the UK Joggler
forum (www.jogglerwiki.com/forum)
