The answer? MANY MANY ".dpkg-new" and ".dpkg-tmp" files scattered throughout the /usr/share/perl5/Slim/ tree. Once I'd trawled through these and renamed the most recent one to the correct name, LMS is starting up just fine and running perfectly, with all plugins in place. Long and short answer: broken DPKG update. -- Hardware: 3x Touch, 1x Radio, 2x Receivers, 1 HP Microserver NAS with Debian+LMS 7.9.0 Music: ~1300 CDs, as 450 GB of 16/44k FLACs.
