As a minimum a Squeezebox system consists of 3 parts

1 The LMS server
This take music from a source (HDD, NAS or some other storage) and
streams it to an "endpoint" or Player

2 The Player
This can be a Squeezebox 'hardware' device or a software player
'squeezelite' being one.

3 A controller
This can be a webpage provided by the LMS server a smartphone or
software 'Jivelite' being one.

> How does LMS help with this being a portable music player, like an iPod?

piCorePlayer is a linux 'distro' that implements one any or all of the
above systems (and does all and any very well) and CAN do what you wish
however running all from an SD card as music storage is more complex and
not recommended.

I suggest for what you are trying to do its not the best way to go, try
looking at other systems like "Volumio" which will run on RPi and should
do what you want with less complexity
