This might work.

All three RPIs would need to have a local instance of squeezelite
running.  You can use the onboard audio for the display only players.

Then create a separate left and right only channel VU meter image file. 
The VU image file creation process has been discussed on the forums
numerous times over the years, including for the rpi 7" screen.  Forum
members kolossos4730 and jstraw have contributed many of the current
replacement VU image files.

Replace the default VU image file with the left and right only images on
2 of the players and then sync all three players together.
