Right, which is the reverse engineered decoder by David Hammerton and
not Apple code (which has been open sourced), hence why the default
codec is "Hammerton" and not "alac."

So after I compile shairport-sync and install into the same location, do
I need to update an init system or tell pcp about it in some way? What
system file is updated when toggling the radio buttons in the web
interface? It looks like it manually starts with flags rather than using
the config file? How do I manually edit those flags or even better tell
it to source the config file?
