It should be possible, but really just out of scope for what
piCorePlayer is.   The base OS is piCore, which does have a full
graphical environment, which could run along side piCorePlayer.  There
are quite a few dependencies with Node-red.....they all would have to be
built from source.

I would really encourage you to just look at adding a jivelite interface
to your pi...There are many screens that can work and make a nice small
installation.
