There are a few main reasons.
1) New versions get new hardware support. (Most are captured on the
Opening Post)
2) New versions get all of the feature updates. (Which are listed on the
Opening Post)
3) Old versions no longer receive updates.

Otherwise you are perfectly fine to stay on old versions.  Probably the
biggest reason to get off of pCP6 is that it uses openssl 1.1.0, which
is now obsolete.  In the future(I cannot predict when) it will affect
https connections to internet streaming.
