the viewing angle of the display is perfectly fine.

Yes if I could get a DSI screen in the size I wanted for the application
then I don't think I would go the HDMI route again. I have done a few
projects with PI's now and its always the same with the smaller screens
in that they may be small but then all the cables make them that much
bigger when housed. You can use right angled USB/HDMI adapters etc. but
they just point the bulk in a different direction. With the DSI screen
there is just one thin ribbon cable to deal with.

Yep 2 wires for the audio to a pair of RCA/Phonos on the rear panel.

Generally the longer the distance the better screened they should be.
The thing to lookout for if the amp is to be remote mounted from the Pi
are ground loops (hum). If you are using switched mode (isolated) PSUs
this probably shouldn't be an issue.
