I probably have the same Waveshare display
(https://www.waveshare.com/wiki/7inch_HDMI_LCD_(H)_(with_case)), and it
works fine with the Max2Play software which is another audio player
system for the Raspberry Pi.
My hardware consists of 2 x Raspberry Pi (2B and 3B+) each with a
HifiBerry DAC+ and the Waveshare 7 inch displays (players), and a
separate Max2play server (Raspberry 3B+).
The added lines in the config.txt file that you had to make are also
required, as well as some changes in the Jivelite configuration.
I am not sure if you can change that settings in Jivelite with
piCoreplayer to match the screen layout.
It should be possible, to my opinion: all hardware is the same as yours,
and it is only dependent of the availability of a configuration option
for Jivelite (which is present in Max2play) to match the Waveshare
display.
