I see no problem with using both video cards. One note, Radeon 7000 do not work with anything lower than OS X.1.5 or OS 9.2.2. Although you can use it under OS 9.1 if you pull the OpenGL parts out of the 9.2.1/9.2.2 updates using TomeViewer.
