My mom has a 266 G3 Powercenter with 304 megs ram and it runs jaguar great.
She has a 16 meg video card and an IDE card and drive. Just a 5400 rpm though. If you can upgrade, it will definitely help. But you can start here and it will run very acceptably. Debian and MOL is no substitute for Jaguar. Put OSX on her, you won't be sorry.
