I'll comment on log rotation, a little off the "separate logs" topic, but a similar topic to your 600 meg log file issue. Log rotation compresses older log files, saving around 75% to 80% of the space a non-compressed plain-text file would use. Verio uses Urchin for log analysis software, and the script Verio provides to install Urchin 5 automatically rotates logs, and compresses them. This command installs it on a Verio VPS:

 vinstall urchin5

Urchin was purchased by Google, and is now known as Google Analytics:

 http://www.google.com/analytics/

I imagine if you install this software it will also automatically install log rotation scripts.
