I have the following DNS record:

example.com, MX, mail.example.com

…then…

mail.example.com, A, 192.168.1.1

This works but would it be more proper to have the "mail.example.com" record be a CNAME?

It's been a long time since I've had to look it up, but the rule had always been that MX records do NOT point to CNAMEs.
