You can do it, there is just no GUI for it at the moment-- well, unless you're running Sun's version of GNOME 2.0 :) You can define up to 12 shortcuts of your own. Easiest way currently is to run gconf-editor, and navigate to /apps/metacity/keybinding_commands. There you will see the gconf keys "command_1" to "command_12" that you can edit to run any command you like. To define the keyboard shortcut for "command_<n>", edit the corresponding "run_command_<n>" key in /apps/metacity/global_keybindings.
