Surprisingly, I can answer that one. It's not an acronym: "Wiki" in Hawaiian means "quick." Usually it is used doubled to indicate urgency, as in "Eh, bra, bring me one beer, wiki wiki, befoah da game stahts!"
The Wikipedia, or quick encyclopedia, appropriated the term.
