There's no Wiki markup editors (like WYSIWYG html editors) that I know of, so this is a somewhat valid complaint. For most tutorials you only need image tags and lists though.

More control usually brings more complexity. I wouldn't call Thunderbird hard to use though. Blender's UI design is somewhat unorthodox (never bothered to learn it myself), but as you're not paying for it, they don't need to listen to your complaints. Linux is a complex thing (as are all operating systems), fortunately newer distros are closing in on other desktop OS's by hiding the complexity behind a simplified user interface. As a general note, free software is created (mostly) by coders for coders and that shows: coders are not UI designers. There has been some movement towards better UI design in the OSS world though, like http://openusability.org
