Hi Stephane,
You can implement a dialog handler class to modify the data handling in
the dialog. The new dialog handler must be specified as class property
of the dialog configuration. I recommend that you extend
ParagraphEditDialog which is the default implementation.
There is a method which can be conveniently overridden to add special
functionality to a dialog:
boolean onPostSave(SaveHandler control)
Do some action after saving. Example: Create a thumbnail of a saved
image and save it in the repository. Make sure you call save() on the
node if you changed anything in the repository.

I know the observation module exists and that could help but, I would
