The category attribute defines STK template internal structure, we have 4 main categories (home, section, feature, content) that are fixed, STK reacts on the category value, i.e. wen you create a page in the first level you will only be able to select the templates with category 'home'. You can use the category subcategory values to get content in your model like the news overview template that will display the content that has category=content, subcategory=news

How can I organize this myself?
Or are we stick to that categorization with the STK?

We provided STK so the majority of could use it as is, trying to cover the most common requirements, but you can always extend it to cover your own necessities.
