You can simply declare arbitrary template (sub)categories in your
template definitions; if your template definition extends STKTemplate
(class property of the tpl def), you might need to customize the
TemplateAvailability class (/<site>/templates/availability - you
should be able to register your own implementation there, with a class
attribute)
