Try editing the template script that adds the image on the page. It is in 
Templating Kit > Templates > /templating-kit/paragraphs/macros/image.ftl.

There are basically two conditions in the script:
If the image has a caption, a definition list (<dl> element) is added on the 
page, including a caption.
If the image doesn't have a caption, a simple <img> element without a caption 
is added.

You could remove the first condition to remove visible captions from all 
images, regardless of whether they were uploaded or from DMS. This may be a bit 
drastic, however, as search engines consider the text adjacent to images too, 
not only the alt attribute. Text accompanying images is quite important. 
Consider adding your own exception for those cases where you don't want a 
caption for a DMS image.
