Subscriptions are configured under config:/server/actications/subscribers/<your 
subscriber>/subscriptions

You might have to resort to creating another subscriber pointing to the same 
public instance just with different subscriptions ... haven't played around 
that area for long time. I think there might be also some old bug related to 
that ... hmm ... MAGNOLIA-2570 ... looking at the description of the issue, it 
might be obsoleted by other changes to activation, but just in case you hit the 
issue you know where it comes from.

As for using different themes as Greg already said, multi-site is an EE feature.
