The question is quite simple: is there a way
to configure some dialogs / paragraphs to “auto-publish” the content,

Sure it is possible.
In my opinion you should consider:
1) Create an observation listener over the portion of website you want
to keep updated
2) When a user modify the content, the listener rise up. At this point,
"filter" the action translating in Java your "critical" constraints.
3) If the action is critical, do a direct activation, bypassing workflow
or launching a custom edited workflow.
For each of these steps, you can find a lot of info inside this mailing
list.
Search on nabbles (here some examples..) and in wiki:

This just to start.
If you need deep help, don't hesitate!
