In the image is not shown if you have "it" (italian) as a language under system languages.
I am able to change Content language ( magnoliaPublic ), but not able to change the magnoliaAuthor language.
Have you tried to click on the user name (top right of admincentral window) and choose the language there? AdminCentral language depends on the user preference more than on the browser request headers.
