DAM control labels are defined in the DAM handlers. Look in Templating Kit > Site Definitions > /default/damSupport/handlers/dms/controls/DmsUUID.

In the site definition you further define which DAM handlers are available on the site. Magnolia CMS provides two DAM handlers out of the box: DMS and upload. You could have a third handler that allows the user to select images from Flickr, for example. The image dialog will display whatever handlers are available. Since DAM subcontrols are handler specific, their labels and descriptions are also defined in the site definition.
