Sorry, but can be expand a bit more when you say "you should easily be able to 
use stk templates with your own model classes"? Any more guidance or examples 
would be appreciated.

My templates simply extends stkSection or stkArticle, providing an overridden 
areas/main templateScript to point at my specific script. If this script 
contains some simple html text (h3 and p), then my pages render just fine using 
the demo-project theme. Its only when I change the template configuration to 
provide my modelClass (eventually my html script will reference this model) 
that I start to get these STK errors about theme.
