Your templates can access channel information exactly same way as STK templates do. You just might have to look at sources of STK to figure out how exactly is it done. Whether you use STK or not, if you define channels in your site configuration, magnolia will apply that channel and resolve channel variations as configured in your site and the site object that you will see in given channel should be already amended with all that was set for given channel.
