57 seconds to render a page is quite long. The first check you should do is to see how much memory and CPU is used. If all assigned to server is used, maybe assigning more resources can help. The next thing to look at is when does it occur. All the time? At certain hour? Can you match that with publishing updates or running the bulk load operations such as massive import handler jobs? Or is it the number of visitors that spike? Last but not least try to identify filters that get so slow. You can use info.magnolia.debug.PerformanceTestFilter inserted at different position in filter chain to find out how long the subchain takes to get executed. Once you identify filter(s) that take too long to run, hopefully you also know what to do about it.
In general this message is not produced by eh-cache, but by Magnolia's CacheFilter to let you know that something in your installation is not behaving as it should. Whether it is related to eh-cache or not, you can find out by enabling debugging on cache related classes and find out whether those resources were served so slowly from the cache or whether they were rendered from repo.
