Hi Matteo,

Yes, all you need to do is implement (or use one of the existing) Vaadin 
widgets.
The magnolia 5 dialogs use Vaadin widgets internally, so as long as you create 
the "wrapper code" to expose the widget as a magnolia "field" you can use any 
Vaadin widget in a magnolia 5 dialog.
