Hi Matteo, I think doing it through a dedicated action is your safest bet, in there you can indeed request a different dialog depending on your parameters, e.g. context. So as such, there is no notion of a "dynamic" dialog definition.
As a more adventurous alternative, you could subclass/implement the FormDialogPresenter(Impl), in particular you would override the #start() method and tweek the [i]dialogDefinition[/i] — or rather a clone of it — before calling super#start().
